Version history will at least capture the revisions autosaved. I don't believe it works if you do it through Word Online as the online version doesn't have Track changes in it. Simul Docs works seamlessly with Microsoft Word and allows you to upload and edit your word document without having to worry about version control or merging two versions together if they had been opened and changed at the same time. If you do it through the desktop app I believe it should work as normal showing the changes that are made by the users.
